

ARTICHOKES IN OIL - 280g
The one with artichokes is one of the most appreciated and well-known preserves in Southern Italy. We prepare it by peeling the fresh artichokes by hand and then placing them in a solution of vinegar, water and lemon. Immediately afterwards we boil them for a few minutes, before storing them in glass jars with mint, garlic, salt and of course extra virgin olive oil.
They are perfect for a quick aperitif with friends!

The extra virgin olive oil from our mill is obtained solely through mechanical processes and without the addition of any product. Unrefined and unfiltered, it is cold-extracted to preserve the organoleptic properties and the amount of antioxidant substances naturally present in the fruit.

The Coratina olive tree has an excellent level of resistance to climatic adversities and parasitic diseases. These characteristics make it ideal for organic farming where chemical products are not used in the fight against parasites and various diseases.

PRODUCTION PROCESS
We are waiting for the perfect ripening of the monocultivar
The harvest takes place not before the fruit begins to change color, a fundamental condition for the quality of the product that ensures low acidity and a fine aroma. After harvesting, the olives are processed into oil within 12-24 hours to maintain the low acidity level and guarantee all the flavor and freshness of the freshly picked fruit.
