Turnip greens are one of the most cultivated vegetables in the South. For years, we too have grown them carefully in the same land that belonged to our grandparents. Today, we work them with extra virgin olive oil, lemon, almonds, garlic and salt to be able to preserve them in the form of a pâté.

Ours is the resilient olive tree
The Coratina olive tree has an excellent level of resistance to climatic adversities and parasitic diseases. These characteristics make it ideal in organic farming where chemical products are not used in the fight against parasites and various pathologies.
We await the perfect maturation of the monocultivar
The harvest takes place not before the fruit begins to change color, a fundamental condition for the quality of the product which ensures low acidity and a fine aroma. After harvesting, the olives are transformed into oil within 12-24 hours to maintain the low level of acidity and guarantee all the flavor and freshness of the freshly harvested fruit.
